The other night my husband and I had a date night. We went to a nice restaurant and when my eyes landed upon the menu full of scrumptious options, one selection immediately stood out and shouted, “Hey you! Over here! Over here!”
It was a berry salad with lime vinaigrette dressing. Fresh blueberries, blackberries, strawberries, and raspberries over a bed of spring greens topped with pecans and lime vinaigrette. My mouth watered.
On that particular night it was precisely what I was craving. I ordered it and was totally head over Horses & Heels blissed out by its heavenly goodness. I love when this kind of thing happens because it then becomes my personal mission to recreate the dish in my kitch.
After a few attempts at recreating the dressing I finally nailed it.
It’s my pleasure to share this delicious and fabulous-for-you salad combination on Horses & Heels.
First, let’s start with the sweet lime vinaigrette dressing. Here are the ingredients you’ll need:
Put all the dressing ingredients into a mason jar (see below for measurements). Screw on the lid and shake vigorously.
Next, get the salad ready by taking a big bowl of fresh spring greens.
Gather your salad accessories:
Add the berries to your salad…
Next the pecans…
And finally drizzle on your lime vinaigrette.
And…
Voila!
And just because I fell so hard for this salad, I made it again this past weekend for a birthday party potluck dinner. It was a huge success and got raving reviews. The most common comment was that the light dressing complemented the sweetness of the berries and the crunch of the pecans just right.

Sweet Lime Vinaigrette Dressing Ingredients:
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Fresh Squeezed Lime Juice
1 Tablespoon Fresh Squeezed Orange Juice or Premade Orange Juice
½ Tablespoon Pure Cane Sugar (or honey or agave)
Pinch of Sea Salt of Pink Himalayan Salt
Salad Ingredients:
Spring Greens Salad Mix
Blueberries, strawberries, blackberries, and raspberries
Pecan pieces
Recipe:
Combine all dressing ingredients into small mason jar, put on lid, and shake thoroughly
Combine salad, berries, and pecans into bowl and drizzle on a small amount of dressing.
Mix together; add more dressing if desired.
