This is going to be my last healthy recipe for the month of January & it’s actually Super Bowl friendly so you could make it this weekend as well. Just don’t tell the guys they are eating Greek yogurt instead of cream cheese…. I love anything that has to do with jalapenos, normally stuffed jalapenos call for a cream cheese base filling so I put a healthy spin on it with yogurt. Prepare for plenty of pink & red desserts for the month of February.
Stuffed Jalapeno Peppers with Greek Yogurt
Notes
Garnish with extra cilantro if you would like.
Ingredients
- 8 large jalapeno peppers
- 8 medium sized shrimp, chopped
- 1/4 cup corn
- 1 small tomato, diced
- 1/2 cup plain Greek yogurt
- 1 clove garlic, minced
- 1 teaspoon salt
- 1 heaping tablespoon fresh cilantro, chopped
- 1/2 cup extra sharp cheddar cheese, shredded
Instructions
- Pre heat your oven to 350 degrees.
- Put on some latex gloves & wash, halve & remove the seeds from the jalapenos.
- Put them on a baking tray & allow them to cook while you prepare the filling.
- Combine shrimp, corn, tomato, Greek yogurt, garlic, salt & cilantro in a bowl.
- Mix well.
- Remove the peppers from the oven & fill them with the mixture.
- Bake for 20 minutes.
- Remove from the oven & top with cheese.
- Bake for an additional 2-3 minutes until the cheese is melted.
- Serve hot & enjoy.

Oh my, if I had all the ingredients I would make thme right this minute. I guess they will be our Superbowl snacks this year. I love that the filling looks so creamy. Cannot wait to pop them in my mouth!!

Maria I used Dannon OIKOS & it was great, plus if you want to enjoy it as a snack it tastes great with honey!
