Tis the season for festive punch bowls and holiday cocktails. This recipe uses fresh limes, seasonal pomegranate, and sparkling water. It’s a refreshing beverage that can easily be spiked with a bit of gin or vodka for the adults.
The recipe is based off of my Pomegranate Lemonade drink. I also used monk fruit sweetener in this recipe. Monk fruit sweetener is zero calories and kept diet approved. I don’t want to add in extra calories with sugar so this is perfect. If you are short on time, you can use lime juice from the store, but fresh squeezed juice is my personal favorite. As the holidays approach it’s a good idea to stock up on flavored sparkling water for cocktails and drinks like this.
Our household always has Spindrift in the fridge. It’s the only sparkling water that uses real fruit and no natural flavors. Natural flavors aren’t natural at all. They are packed with chemicals. I recently learned this and have been trying to avoid foods with natural flavors in them. It’s part of my commitment to a healthier lifestyle. Of course, I’m still going to eat junk food on occasion and make decadent recipes – it’s all about moderation.
- 1 cup pomegranate arils
- 1 cup lime juice (I prefer fresh squeezed)
- 1/2 cup water
- 1 cup monk fruit sweetener (or sugar)
- 5 cups cold water
- 2 12 ounce cans of sparkling lemon water (I use Spindrift)
- Puree the lime juice and pomegranate in a blender.
- Add water and 1/2 cup monk fruit sweetener to a small sauce pan and dissolve over a low heat.
- Add sugar water to a large pitcher. Pour in 5 cups of water and strain in the pomegranate and lime juice mixture.
- Pour in the sparkling lemon water before serving.
- Serve over ice and garnish with lime slices and pomegranate arils for a festive touch.
