This batch style cocktail is perfect for enjoying this fall or holiday season.
If you are looking for an autumn themed mojito with a twist, this is your drink. It features tangy pomegranate juice, sweet cherries, mint, rum and club soda. I was inspired to create this after these Blood Orange & Cherry Mojitos I made on behalf of Bacardi several years ago. These drinks are dark and moody like Halloween but could easily be made for Christmas as well. Pomegranate is starting to be in season and is one of my favorite snacks during the fall and winter season.
The key to making this drink well-balanced is to make sure you muddle the sweet and dark cherries very well. They add the sweetness you need, without having to add sugar like in a traditional mojito.
Pomegranate Cherry Mojitos
Ingredients
- 8 ounces (1 cup) dark Rum of choice
- 12 ounces (1.5 cups) pomegranate juice
- 8 ounces (1 cup) club soda
- Mint - 2-4 sprigs per drink
- Dark sweet cherries - 4 per drink
- Pomegranate arils - 1 TBSP per drink
Instructions
- Add rum, pomegranate juice and club soda to a pitcher and mix.
- In the individual glasses, muddle the cherries, pomegranate arils and mint leaves.
- Add ice and divide the cocktail among the glasses.
