Raise your hand if sometimes you wish you just owned a cupcake or dessert shop – (Raises hand). I love peanut butter, marshmallows, chocolate, graham crackers & all of the above. After a mishap with some s’more cookies last week (tasty but ugly cookies) I came up with these s’more bars. My recipe was inspired/adapted from sophistimom & they are so good!
The peanut butter mixture tastes just like buckeyes… need I say more?
Peanut Butter S’more Bars
Gooey & chewy s'more bars that are sure to please.

Use a fridge or freezer to help cool it more quickly, cutting it while cold also helps making cutting much easier!
Ingredients
- Graham Cracker Bottom:
- 2 packages of graham crackers
- 2 sticks unsalted butter, melted
- Peanut Butter Topping:
- 1 cup peanut butter
- 1 cup powdered sugar
- 2-3 TBSP water
- Toppings:
- 1 cup chocolate chips or candies
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 350 degrees.
- Finely crush the graham crackers, use a food processor, a bag & a rolling pin or whatever method you prefer.
- Combine graham cracker crumbs with melted butter & mix well until the crumbs are saturated.
- Press the mixture to the bottom of a 13" by 9" baking pan.
- Insert into the oven & bake for 10 minutes.
- While this backs combine peanut butter & powdered sugar in a bowl.
- Mix by hand or with a electric mixer until the powdered sugar disappears.
- Add in water.
- Remove graham crackers from the oven & add the peanut butter mixture on top. I did not evenly spread mine, but dropped spoonfuls of the peanut butter on top because it will melt & spread in the oven.
- Spread chocolates across the top.
- Top with mini marshmallows.
- Bake for 20 minutes & allow it to cool completely before serving.
