These oven roasted brussels sprouts are crispy, garlicky, and delicious.
If you are looking for a side dish that requires minimal effort but delivers on flavor, you need to try these brussels sprouts. Five years ago, I shared The Best Brussels Sprouts recipe and it was a hit. That recipe was pinned and shared millions of times and brought a steady stream of traffic to Horses & Heels. I’ve continued to love sprouts so I wanted to share a new recipe that ANYONE can make who loves sprouts.
This side dish has five ingredients – brussels sprouts, garlic, butter, sea salt, and pepper. It’s amazing the flavor you can bring out of a dish with just a handful of good ingredients.
I roasted my sprouts for exactly 35 minutes at 350 degrees but you can increase the time to make these even crispier.
- 2 lbs brussels sprouts (cut in half)
- 2 tablespoons fresh garlic, sliced
- 3 tablespoons unsalted butter
- sea salt and fresh ground pepper to taste (I used a five pepper blend)
- Pre heat the oven to 350 degrees
- Spread sprouts and garlic on a baking sheet, place the butter in the middle of the sheet. Season lightly with salt and pepper.
- Bake for 30-35 minutes flipping the sprouts at the halfway point.
- Remove from the oven and season with additional salt and pepper if needed. Serve and enjoy.
This recipe made four servings so you might want to consider doubling or tripling it for a holiday gathering. My husband and I also agreed we would like more garlic, but I really enjoy bold flavors. I hope you give this recipe a try, it’s one of my favorites!

Yum. Looks great. It’s hard to find fresh brussels sprouts around here so I usually buy frozen – also tough to find! Looks like this recipe could use frozen, though I’m not sure how easy it’s to cut frozen brussels sprouts in half, I always roast them whole in the oven!

Oh wow, I never thought of that. We always have fresh, but they are huge! That’s why I cut them in half but you can definitely roast them whole too.
