Enjoy a frozen blended Watermelon Kumquat Margarita!
Cheers to summer, new adventures, lasting friendships, and hustling. This year has been a busy, but wonderful year. At the end of each day, I’m thankful for what I have and what I’ve accomplished so far. Sipping on a tasty margarita is the perfect way to celebrate all the success after a long day.
I added a little yellow and red food coloring to my salt and sugar rim. If you have never tried a half salt, half sugar rim before on a margarita – you are missing out. It compliments the citrus flavor so well.
My husband claims these are the best margaritas I’ve ever made thanks to our kumquats. Kumquats are an amazing fruit. They look like mini oranges and are packed with sweet and tangy flavor. You eat kumquats whole, skin and all! The texture and fiber from the kumquats gives this frozen margarita the perfect texture. I should note that if you enjoy orange juice with pulp, these are the margaritas for you. Bits of citrus pieces are found throughout the drink, it’s amazing.
We have two kumquat trees in pots on our patio. They are easy to take care of and yield a pretty big crop. I’ve had them since February (they were my Valentine’s Day gift). I’m excited to see them continue to grow and get more fruit from them.
Frozen watermelon also helps give these give these margaritas a nice texture. Make sure you add a nice heaping cup, be generous!
- 1 cup lemonade
- 1 cup frozen watermelon
- 1 cup tequila
- 1 heaping cup kumquats
- 3 cups ice
- Combine lemonade, watermelon, tequila, kumquats, and ice in a blender.
- Blend until smooth and pour into salted (or unsalted glasses).
- Enjoy!
