Egg bakes are an easy breakfast and are also great for “cleaning out the fridge” – you know what I am talking about, add a little of this and a little of that. This egg bake has potatoes, cheese, sausage, scallions and eggs of course! I usually want a big breakfast in the morning especially since I stopped snacking at night, I wake up pretty hungry!

An easy egg bake with potatoes, sausage and cheddar cheese.

Ingredients
- Butter (for greasing the dish)
- 1 medium sized potato
- 3 sausage patties
- 3 eggs
- 1/4 cup cheddar cheese, shredded or cubed
- 1 tablespoon Sriracha (can substitute hot sauce)
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- scallions, chopped for garnish
Instructions
- Pre heat the oven to 300 degrees.
- Microwave the potato for about 5 minutes on the potato setting and grease your baking dish with butter on the bottom and sides.
- Also cook your sausage patties for about 5 minutes while the potato is in the microwave.
- Carefully slice the hot potato and mash it to the bottom of the dish.
- Remove sausage from the pan, blot off any grease and crumble into a large glass.
- Crack eggs and add to the glass.
- Stir in cheese, Sriracha, garlic salt, and pepper.
- Mix everything up with a fork and pour it into the baking dish.
- Bake for 30 minutes.
- Garnish with scallions and serve hot.
