Last week pineapples were on sale for a dollar! I happily grabbed four pineapples off the display, knowing I was going to make a delicious cocktail with one of them. Nothing beats the taste a a sweet and juicy pineapple.
I combined pineapple, white rum, lime juice, agave syrup, basil, and ice to blend up a batch of these tasty cocktails. It was enough to make four drinks and is an easy batch cocktail. If the idea of mixing basil in a drink is too wild for you, go ahead and substitute it for some mint – but I promise the basil is delicious!
*Pineapple prep tip – I learned this one from a friend who is also a chef. The pineapple ripens from the bottom and that’s where it is the sweetest. Flip your pineapple upside down the night before you cut it to allow the sweetness to distribute to the top as well.
These drinks are so tropical and flavorful. They are similar to a mojito but don’t taste quite as sweet.
- 8 oz white rum
- 3 cups fresh pineapple (or pineapple juice)
- 2 oz lime juice
- 3 oz agave syrup
- 10 basil leaves
- 3 cups ice
- *Extra basil leaves and lime slices for garnish.
- Combine rum, pineapple, lime juice, agave, basil, and ice in a blender and blend.
- Pour into glasses and garnish with basil and lime.
I do mention this in the recipe, but you may swap the pineapple chunks for pineapple juice. I like the consistency of this drink, but some people enjoy a “no pulp” style beverage.
