Tantalize your tastebuds with this Creamy Verde Chicken Soup.
My favorite meals are often set and forget soups I toss in the crockpot. Life gets busy but I still want to enjoy homemade food packed with flavor. This verde chicken soup is crockpot friendly and requires just a handful of ingredients. I give it just the right amount of spice with a couple of jalapeños. Feel free to omit or swap them out for green bell peppers if you aren’t into spicy food – the heat really gets taken out of them once they are cooked. The acid from the tomatillos cuts the cream cheese, giving it tons of flavor that isn’t too rich.
Fresh tomatillos can be substituted for verde salsa if you can’t find them at your local grocery store. I get mine for .99 a pound at my local Ralphs – it’s one of the benefits of living in Los Angeles, there is never a tomatillo shortage around here.
I had just roasted a chicken for the Super Bowl and had a ton of leftover tomatillos for salsa when I decide to make this soup. I always prefer to roast whole chicken for my meat instead of getting boneless breasts. Sure, there is a little more work involved, but you get a more juicy and tender chicken.
The cooking process is simple – add onion, freshly diced tomatillos, chopped jalapeños, shredded chicken, chicken broth, cream cheese and spices to a crockpot. Let this go overnight on low or for about six hours or more during the day. In the end, you’ll have one amazing soup. Garnish it with some lime wedges, cilantro and/or tortilla chips for a satisfying meal.
Crockpot Creamy Verde Chicken Soup
Ingredients
- 4 cups chopped tomatillos
- 1 cup diced yellow onion
- 1/2 cup sliced jalapeños
- 1 cup chicken broth
- 3 cups shredded chicken
- 1 8 ounce package cream cheese
- 1 teaspoon cumin
- salt and pepper to taste
Instructions
- Set your crockpot to the lowest heat setting. Adding tomatillos, onion, jalapeños, broth, chicken, cream cheese, cumin, salt and pepper.
- Allow this to slow cook overnight or for at least six hours.
- Stir ingredients about an hour before serving.
- Garnish with a lime, jalapeños and chips if desired.
