I love the holidays. For me it’s about reflecting on a year coming to a close, spending quality time with loved ones, and shopping for the perfect gifts. I enjoy gifting and picking out that special present someone wouldn’t normally buy for themselves. When I think about the shopping process, I dread the long lines and need a coffee drink to get me through it all. Make it a refreshing iced coffee beverage with seasonal flavors and I’m a happy girl.
Lately I’ve been doing a lot more online shopping, but I still need a coffee by my side. Meet my (and hopefully your new) favorite; Cinnamon Cookie Iced Coffee. This drink features Dunkin’ Donuts Cinnamon Roll flavored coffee, cookie dough ice cream, and lots of delicious cinnamon. It’s a sweet caffeine beverage that you’ll gulp down in minutes. I picked up my coffee at Walmart in the coffee aisle of course. I collaborated with Dunkin’ Donuts to create this recipe and I hope you love it as much as I do. There is nothing better than opening a bag of brand new coffee. I really wish technology came with a scratch and sniff option. The aroma of this coffee is so good I want to bottle it up and put it in a candle! Here’s a freshness tip for you, store your opened coffee in the fridge to keep it fresher longer and keep the bag well sealed.
Make sure you use a good quality cinnamon with this recipe. I’m a bit of a snob when it comes to cinnamon and have four different varieties in my loaded spice cupboard. A Vietnamese cinnamon is one of the strongest kinds and my favorite. Ceylon cinnamon tends to be more mild while Chinese and Indonesian cinnamon are somewhere in the middle. The cinnamon only enhances the flavor of the Dunkin’ Donuts Coffee.
Naturally I like to sprinkle a little extra cinnamon on top. There are delicious bits of cookie and chocolate from the ice cream inside too. This is such a satisfying drink to help me power through my shopping list.
If you are feeling extra adventurous, top this off with a little whipped cream. Who can resist this?
Then add even more cinnamon…
- 2 cups chilled Dunkin’ Donuts Cinnamon Roll Coffee
- 3 cups cookie dough ice cream
- 2 cups ice
- 1 cup milk, I used plain almond milk
- 2 teaspoons high quality cinnamon, I prefer Vietnamese
- *Optional whipped cream for garnish
- *A few pinches of cinnamon for garnish
- Brew coffee ahead of time and store it in the fridge.
- Add coffee, ice cream, ice, milk, and cinnamon to a blender. Pulse on high until smooth.
- Pour into glasses immediately and garnish with whipped topping and extra cinnamon if desired.
This will make four small 8 ounce servings or two larger 16 ounce servings. Share it with your friends or just keep it to yourself, no judgement here.
