Pomegranate is in season! Enjoy it in a delicious lemonade.
I always get excited each fall when pomegranates are in season. I love crunching on the tart arils as a snack. The juice of a pomegranate is also perfect for making pretty drinks and cocktails. I decided to make a sweet and tangy Pomegranate Lemonade. The drink is a pretty pink hue and tastes amazing on a warm fall day.
I created my lemonade with monk fruit sweetener. Monk fruit as a sugar substitute is zero calories and keto diet approved. I’m not doing a crazy diet right now, but have been making a few lifestyle changes. I was skeptical about using this sweetener at first, but you cannot tell that I didn’t use regular sugar in the recipe. Feel free to use whatever sugar or sweetener you prefer with this recipe.
Each pomegranate will yield about a cup of arils depending on the size. I loved this recipe so much, that I’m already working on a couple more. Lately, I’ve been slacking in the recipe department. I’m planning on changing that. I’ll be churning out new recipes each week again and I’m looking forward to it.
- 2 cups pomegranate arils
- 1 1/2 cup fresh squeezed lemon juice
- 1/2 cup water
- 1 cup monk fruit sweetener (or sugar)
- 5 cups cold water
- *Garnish and serve with additional lemon slices and pomegranate arils.
- Add pomegranate arils and lemon juice to a blender. Puree.
- Add the half cup of water and one cup of monk fruit sweetener to a small sauce pan. Slow heat up and stir until the sugar dissolves. Remove from heat and allow to cool.
- Add 5 cups of water to a large pitcher, add in sugar mixture and strain in lemon and pomegranate juice.
- Serve over ice and garnish with lemon slices and pomegranate arils.
