Enjoy a loaded potato salad with spicy popper jalapeño flavor!
Warmer days are coming. Before you know it, it will be time for picnics and potlucks again. Instead of throwing together the same old recipe, consider making something new – a real crowd pleaser. My jalapeño popper potato salad has red skin potatoes, crispy bacon, sharp cheddar cheese, spicy jalapeños, and red onions with a cream cheese and ranch dressing.
I promise you won’t come home with leftovers with this dish easy dish.
If you are worried about the heat levels, you can swap out fresh jalapeños for canned or mixed the two together. The cream cheese and cheddar do a great job cutting the heat of even the hottest jalapeños.
- 6 cups cooked and cubed red skin potatoes
- 1 8 ounce pk cream cheese, softened
- 1/2 cup ranch dressing
- 2 cups shredded cheddar cheese
- 8 slices bacon, crumbled
- 1/4 cup diced jalapeños
- 2 tablespoons chopped green onions
- Prepare and cook the potatoes.
- In a large mixing bowl, combine cream cheese and ranch dressing.
- Toss in cooked potatoes (when they are warm or cooled).
- Stir in cheddar cheese, bacon, jalapeños, and green onions. Mix well.
- Serve immediately or refrigerate for up to two days before enjoying.
Garnish and serve this potato salad with extra sliced jalapeños to kick up the heat a little more.
