Holiday snacking and meals are one of my favorite things about this time of year. I don’t have any food allergies and I’m an adventurous eater so nothing usually stops me from trying new things. However if you have a dairy allergy a lot meals and snacks get eliminated for you quickly. I created this Spicy Sausage and Kale Soup using a2 Milk® so it’s perfect for guests with an intolerance to A1 protein in regular milk.
If you aren’t familiar with a2 Milk® be sure to read through their FAQs online. a2 Milk® is the only fluid milk on the US market that is guaranteed A1 protein-free. Ordinary milk contains A1 and A2 proteins while a2 Milk® contains only the A2 protein.
Another reason to love this soup is the addition of kale – I never thought this healthy vegetable could taste this delicious. Kale is loaded with healthy benefits and is so good for you!
I’ve been making this kale soup regularly since Halloween, it’s the perfect winter meal and is a huge hit with guests. It yields a nice big batch for plenty of leftovers or is perfect for holiday parties! You can find a2 Milk® in the dairy section with the rest of the milk, I picked mine up at Whole Foods.
- 8 cups of beef broth
- 3 cups diced red skin potatoes
- 1/2 cup diced red onion
- 1 pound sweet or spicy ground Italian sausage
- 6 cups chopped kale
- 3 cups a2 Milk®
- 1/2 teaspoon crushed red pepper flakes
- Salt and pepper to taste
- Add the beef broth, potatoes and onions to a large pot. Place the pot over the stove and cook over a medium heat uncovered for ten minutes.
- Add in the sausage, kale, and milk. Cover the pot and bring to a boil.
- Reduce the heat and simmer for an additional ten minutes making sure the potatoes are tender and the kale is a nice shade of dark green.
Serve this soup with some nice crusty bread, crackers, or croutons and you won’t be disappointed! You can find a2 Milk® at a retailer near you, use their product locator to find your closest store.
For those of you who don’t like kale, I highly advise trying it in soup. Cooking it keeps the nutrients and reduces some of the bitter flavor.
